Meron Injera Inc.

Meron Injera is an bakery and small market on Clark Street in Chicago owned by Meron Embaye and her husband, Neguse Dorry. The couple comes from the northern Tigray region of Ethiopia. The shop makes injera, ambashas and other breads that it sells in markets around the area. They also sell four-pound packages of teff at the excellent price of $10, and huge sacks of the grain at an even lower price per pound.

Making injera is a labor-intensive process, with each piece made one by one, as the video at the end of this post shows. The baker works the row of mitads, each at a different stage of making injera. You can see her pour batter onto one mitad, and for another, she uses a sefed – a large round piece of wicker – to lift off the finished pieces and place them on top of one another to cool before being wrapped.
